In the 2009 harvest, we added an amazing Carignan vineyard to the winery that was slated for uprooting. After visiting the vineyard, Assaf is impressed and convinces the winemaker to postpone the evil of pruning. Assaf plans a unique protocol for restoring the vineyard by reshaping the vines and stopping irrigation. The instructions given were fully followed by the winemaker, and as a result, we were able to restore the vineyard and bring it to a state of very high quality harvest. The harvest was exceptional in its concentration and depth of flavors, but low in terms of weight. The winemaking methods and barrel aging regime are identical to previous harvests. The nature of the harvest and the addition of high-quality fruit from the new-old vineyard resulted in the creation of a wonderful wine that is at the perfect time to start enjoying it. The wine exhibits an expression of primary fruit with a richness of aging aromas and a fascinating combination of depth, strength and complexity, wonderful aromatics and an exceptionally long finish. It is in a wonderful drinking window right now but will certainly continue to develop for another 4-6 years.

It will go well with spicy lamb and beef dishes, especially game or duck, and strong-flavored hard cheeses.
