Every year, in anticipation of Independence Day, a passionate conversation begins on the topic of "What do you think is most Israeli?"
So we put it here: Israeli wine has always been here – in the Land of Israel – since time immemorial.

The act of making and drinking wine has been part of our roots since biblical times.
The word "wine" is mentioned in the Bible about 300 times and archaeological findings prove that our ancestors drank wine -
A lot of wine.
In modern Israel there have been several wine revolutions,
The last revolution is signed Assaf Paz, the winemaker of Vitkin Winery.

Assaf grew up in the Galilee countryside, where he cultivated a love of nature and the open landscape. He has a hand in everything; from the gardening at the winery, the instructions for growing grapes in the remote vineyards, the creativity and precision in winemaking, to the connections with customers.
His culinary background sets the tone for culinary winemaking. His international training provides a professional foundation for quality creation with local roots.

Assaf was the first winemaker to bring back into use ancient grape varieties that grew here. At a time when most winemakers chose to play it safe and produce wines from well-known and beloved varieties like Cabernet Sauvignon and Chardonnay, Assaf chose to produce wines from varieties with zero branding and prestige but with plenty of potential.
In the days when grapes were harvested Carignan It was not a good place for wine, and Assaf chose to follow a path not taken before him.
We can wholeheartedly say that the rest is history.

Today, many wineries in Israel produce wonderful wines from Mediterranean, Israeli varieties that exploit the full potential of Israel's growing conditions. Varieties like Carignan, Petite boat, Grenache.

Series "Israeli Journey" Vitkin Winery's is a full expression of passion and love for the land of Israel. The wines in the series are built as a blend harvested from Vitkin Winery's vineyards planted in the village of Vitkin and throughout the country, from the Jerusalem Mountains and Carme Yosef in the south, through Zichron Yaakov and Binyamina in the center to the Golan Heights and the Upper Galilee in the north.

This is an agricultural, local, and authentic Israeli journey.
